Classic salad dressing twist…
We make this recipe when we buy Bibb or Boston lettuce, but it works with any kind. Basically, this is the traditional French vinaigrette with lemon juice rather than vinegar and a little Dijon mustard thrown in.
1 part freshly squeezed lemon juice (remove all seeds)
3 parts good olive oil
freshly ground black pepper to taste
salt to taste
Dijon mustard to taste
Put the lemon juice in a jar, then slowly whisk in the olive oil. Season with salt, pepper and Dijon mustard to taste. Cap the jar and shake vigorously. Taste again and adjust as needed.
