Potatoes
Mom’s spicy baked potatoes...
1 baked potato, washed and pierced
Butter
Salsa – as spicy as you can handle
Spinach
Olive oil
Microwave potato for 10 minutes or until a knife can slide through with little resistance
While the potato is cooking, sauté spinach in oil until wilted. Remove from heat.
Take the potato out of the microwave, slice it and fill with the hot spinach. Top with salsa.
